8 rusks
200 g yogurt
300 g anthotyro cheese
Garlic powder
10 multicolor cherry tomatoes cut in half
2 tbsp walnuts
1 tbsp cranberries or raisins
1 tbsp balsamic vinegar
1 tbsp brown sugar
Olive oil
Salt
Pepper

Execution
- In a food processor, add the rusks, salt, pepper, ½ tsp garlic and 4-5 tsp olive oil. Beat well until you obtain a moist dough.
- Press the dough into an oblong or round tart pan all the way up the sides or into small individual tart pans and refrigerate.
- Prepare the cream by mixing in a bowl the yogurt, cream cheese, ½ tsp garlic, a bit of thyme, 2 tbsp olive oil, salt and pepper.
- Remove the dough from the refrigerator and spread the cream on top of it. Refrigerate.
- Prepare the confit by placing the cherry tomatoes, cranberries or raisins, balsamic vinegar, sugar, 3-4 tablespoons of olive oil, a sprig of thyme, salt and pepper in a small pan and bake in a preheated oven at 180° C until the cherry tomatoes soften and caramelize, for approximately 20 minutes.
- When the confit has cooled, remove the tart from the refrigerator and spread the confit along with the syrup on one part of the tart or all over the tart
- Garnish with extra thyme, pepper and walnuts
